Pimento Cheese Sandwiches

Serves 4


  • 4 ounces Wisconsin cream cheese, softened
  • 1 cup (4 ounces) Wisconsin aged cheddar cheese, shredded
  • 1/4 cup jarred pimentos or roasted red peppers, drained and finely diced
  • 1/4 teaspoon cayenne pepper
  • 8 slices Italian bread

Cooking Instructions

Place cream cheese in bowl of food processor; process until smooth. Add cheddar, pimentos and cayenne pepper; process until combined.

Place 4 slices bread on flat work surface. Spread each slice with one-fourth cheese mixture; top with remaining bread slices. Wrap each sandwich with plastic wrap and chill up to 8 hours before serving.
