Pear Brunch Cake

Makes 2 8-inch cakes


  • Streusel:
  • 3/4 cup flour
  • 1/2 cup light brown sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 4 tablespoons (1/2 stick) cold butter, diced
  • 1/2 cup almonds, sliced
  • Cake:
  • 2 cups flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups whole milk
  • 1 teaspoon almond extract
  • 1 large egg
  • 2 ripe pears, cored and diced

Cooking Instructions

Heat oven to 350°F. Butter two 8-inch round baking pans and set aside.

For streusel: Combine flour, brown sugar, cinnamon and salt in medium bowl. Cut in butter using a pastry cutter or fork until mixture forms small to medium pieces. Mix in sliced almonds. Cover and refrigerate until ready to use.

For cake: Mix flour, sugar, baking powder and salt in medium bowl. Add milk, almond extract and egg, stirring until just combined.

Pour batter into prepared baking pans. Sprinkle half the pears over top of each cake, pressing into cake slightly. Top each cake with half the streusel mixture.

Bake 30 minutes, or until toothpick inserted into center of cake comes out clean.
